A Kat Class Favorite: No-Bake Oatmeal Peanut Butter Cups!
Our very own Kathryn Carr delights her monthly after-class gatherings with a crowd-favorite treat: No-Bake Oatmeal Peanut Butter Cups!
These wholesome, easy-to-make treats are the perfect blend of peanut butter, chocolate, and oats. Try them out and enjoy a delicious snack that complements your wellness journey!
Ingredients:
- 1 cup unsweetened peanut butter 
- ¼ cup pure maple syrup 
- ½ tsp vanilla extract 
- 1¼ cups quick-cooking oats 
- Pinch of sea salt 
- 1 cup chocolate chips 
- 1 tbsp coconut oil 
- Flaky sea salt for topping 
Directions:
- Mix peanut butter, maple syrup, and vanilla in a bowl. Stir in oats and sea salt. 
- Press the mixture into a muffin tin lined with parchment or silicone cups. 
- Melt chocolate chips with coconut oil, then pour over each cup. 
- Sprinkle with flaky sea salt and freeze for about an hour. 
- Enjoy straight from the freezer or let them soften for a few minutes before serving.
