A Healthy No-Bake Protein Ball Recipe

Quick Recipe Overview

Ingredients

  • 1 cup almond flour

  • ½ cup vanilla protein powder (plant-based or whey)

  • ½ cup unsweetened shredded coconut (plus extra for rolling)

  • 2–3 tbsp honey or maple syrup

  • 2 tbsp coconut oil (melted)

  • Zest of 1 lemon

  • 1–2 tbsp fresh lemon juice

  • ½ tsp vanilla extract

  • Pinch of sea salt

Optional:

  • 1 tbsp chia seeds or collagen peptides

Instructions

  1. In a medium bowl, combine almond flour, protein powder, shredded coconut, and salt.

  2. Add honey or maple syrup, melted coconut oil, lemon zest, lemon juice, and vanilla.

  3. Stir until a soft dough forms. (If needed, add a small splash of almond milk to bring it together.)

  4. Roll into bite-sized balls.

  5. Gently roll each ball in extra shredded coconut for a soft, finished texture.

  6. Chill in the refrigerator for 20–30 minutes before serving.
