Ingredients
¾ cup walnuts
10 pitted Medjool dates
¼ cup pumpkin purée
Pinch of sea salt
¼ cup unsweetened cocoa powder
½ teaspoon vanilla extract
Directions
Place ⅓ cup walnuts in a food processor and pulse until they resemble coarse sand. Set aside.
Add remaining walnuts and process until finely ground.
Add dates, pumpkin purée, cocoa powder, salt, and vanilla. Blend until smooth.
Roll into 8 golf-ball-sized balls.
Roll each in the reserved walnuts.
Enjoy immediately or chill for a firmer texture.
Optional: Freeze for 1 hour to set. Store in fridge or freezer.
